The main difference between the two types of splashback is really just the thickness.
The 1mm thick type is just a flat piece of stainless steel. This is ideal if you are sticking straight to a flat wall or sticking over the top of existing ceramic tiles.
The mdf backed type is 8mm thick overall (1mm of stainless steel with a 7mm mdf backing) The mdf is just there as a backing material as an 8mm thick solid piece of stainless steel would be rather heavy, not to mention expensive! This type is useful if you laying tiles next to the splashback and need it to be the same thickness as the tiles, ie you want to tile it in.
